Huo Shan Huang Ya is a yellow tea that comes from Anhui province. Yellow tea is a class of tea that is similiar to a green tea, but processed in a different manner. The method of processing involves wilting, heating, covering in cloth to allow the tea to reabsorb its essential aromas and flavors, then a final pan frying.
It is the covering of the tea, which is called “sealing the yellow” that gives this tea its distinct characteristics. It results in a yellowish liqueur and also a yellowish hue to the leaf.
What is unique about Huo Shan Huang Ya, is that it is not wrapped like other yellow teas. Instead this yellow tea gets its characteristics and delightful flavor from the terroir of the region it is grown in, Yellow mountain, the cultivar used, which has a yellow green hue to it, and the method of curing which involves: indoor wilting, pan frying, wilting, shaping, wilting, then baking. The whole process must be completed within two days.
The result is a leaf whose shape is said to be like a sparrows tongue. The body of the tea is slightly creamy, light, peppery, with a hint of honey dew melon. The liquor of yellow tea is said to be easier on the stomach than green tea, and can be enjoyed by most people who are sensitive to green teas. It is very rich in polyphenols and l-theanine.
Our tea is from the village of Jin Ji LIng of Huoshan. This is considered one of the origins of the best grades of yellow tea.
