Gong Ting Puerh is a Shu Puerh. It has been fermented with enzymes in order to speed the aging process and help produce the beneficial statins found in aged Puerh. Fermented for one month in an impeccably clean tea house, this Puerh is delicate, drinkable and healthy. It is made from small buds gathered in the spring time in the mountains of Yunnan.
It has flavors of date, pine, elm, and sour plum initially. The Ume mouth feel is extra special and it can handle up to 12 pours. It is free of the fish flavor of lower quality Puerhs and will delight both the novice and the accomplished Puerh drinker.
Pairs well with dim sum, smoked meats, smoked fish, chocolate, Tofu, and Vegetables.
This tea should be prepared in the following manner for best results.
Water Temperature: 215
Preferably use a Yixing tea pot
Steep time: 1 minute then longer for each additional pour
serve in a white cup or small ceramic cup
8 oz of water for one teaspoon of tea.
