Our Tie Guan Yin

Tie Guan Yin is named after the Buddhist goddess of mercy, Guan Yin. Our Tie Guan Yin is a delightful oolong tea from Fujian. The method of preparation of this special oolong is very complex and has been a historical secret because it produces the most intriguing and long lasting flavors of any tea. You can pour fresh water on this tea in your cup over 10 times and still be tasting a delicious drink.

What is even more special is the notes of the tea will change over the time. Initially your tea will be a strong roasted flavor, and as the leaves unfurl they will become more floral and fruit in notes. This particular Iron Goddess tea was harvested in the month of May.  This quality is why Tie Guan Yin can be some of the most expensive tea in the world. Our Tie Guan Yin is Qing Xiang style, which means moderately baked, providing a perfect balance between roasted nut flavors and floral fruit flavors.

Currently we are offering the 2016 spring harvest from Anxi Fujian. My favorite way of serving is in a pint glass where I place 2 grams at the bottom of the glass. Then I pour on 195 F water and fill it up. Let the tea leaves float in the glass and admire their beautiful whole leaf shape. Lower quality Oolong has torn and partial leaves. These leaves will unfold into complete gorgeous shape and dance in your cup as you drink the tea. You can refill your glass up to 10 times with this tea served in this way.

How to prepare Iron Goddess Tea

Water temp: 195

Time in: 45 seconds, adding 30 seconds per pour

Pours per serving: 10

Time of day:morning til evening ( I drink it after dinner too!!!)

Food pairing:  fish, red meats, dumplings, vegetables, soft cheeses and blue cheese, fruits, chocolate
